Food & Catering in your Luxury Chalet
All of our chefs have been employed for their professionalism, experience, creativity, flair and the desire to offer the very best dining experience, presented and served, just as you want it. Flexibility is key in our private chalets and our chefs will tailor a menu to your tastes. Therefore, our guests can expect well balanced, flavorsome, well presented dishes, at all times.
Whether a gourmet 4 course dinner, a family style feast, a quick snack or a lite bite – it will be just as you request.
Our chefs have catered for all kinds of bespoke events. Weddings, parties, super yachts, private dining and of course luxury chalets. So please do note that the below is not a ‘set menu plan’, but simply an example of past dishes and the style you can expect from our chefs. Our team will plan the menus around the individual needs of each group of our guests.
We have a strong belief that the produce does the talking, that’s to say that we will always use the best, freshest and local(wherever possible) ingredients. Quality produce, excellent flavours and a winning presentation.

Breakfast
We believe that breakfast, along with lunch and dinner is the most important meal of the day(!). Through ‘on-table buffets’, daily specials and requests we will make sure you have all you need to get you going in the morning.
Artisan Continental Buffet
A continental buffet is available to our guests for every morning of their stay, and can include the following:
- Fresh croissants and pastries
- Home made muesli and granola
- Dried fruits, nuts and seeds
- A selection of cereals
- Fresh fruit platters
- Cured meats and local cheeses
- Fresh breads
- Local yogurts
- Local or homemade jams and chutneys

Daily Specials & Requests
As well as the ‘traditional English breakfast’ – bacon, local sausage, eggs to request, our chefs are used to taking requests and with prior info will be happy to offer up such delicious options:
- Smashed avocado on toasted ciabatta served with grilled halloumi, tomatoes, wilted spinach and a poached egg.
- Sweet potato hash, with feta cheese and a poached egg.
- Homemade American pancakes, served with blueberries, crispy bacon and maple syrup.
- Huevos Rancheros. A spicy Mexican breakfast of tomatoes, peppers and onions, baked with an egg.
- Smoked Haddock Kedgeree
- Classic Eggs Benedict or Eggs Royale
- Spanish Tortilla with chorizo and peppers
- Cinnamon French toast, served with bananas, blueberries and maple syrup.

Afternoon Delights
Afternoon Tea or afternoon snacks are a long standing tradition in our chalets. Of course our chef will tailor to your preferred options; sweet or savoury, light/healthy or heavy and rich – whatever your taste it will be homemade, deliscious and served in your chalet upon your return from the slopes:

Your Gourmet Dinner
Dining together as a family or a group is a luxury in itself and plays an important part of all our chalet experiences.
Served five days a week, our guests can enjoy pre-dinner canapés, followed by a delicious four course meal. Our private chefs will be able to discuss and adapt their menu plans to suit the individual needs of their guests.
Should you prefer just the two courses, 3 courses or a 6 course taster menu, just let us know. If there is a celebration and specific requests, just let us know what and when and we will help create a memorable evening.
Special requirements, dietary requirements or foods to avoid, just let us know and we will adapt the menus accordingly.

Canapés
Smoked mackerel pâté with cranberry, lime and ginger on Melba toasts
Thai crab cakes served with a sweet chilli dip
Mini Yorkshire puddings, with roast beef, horseradish and fresh rosemary
Gazpacho shot served with an avocado and cucumber salsa
Mini Poppadoms served with curried chicken and a mango salsa
Wild mushroom arancini
Mini onion bhajis and vegetable samosas served with a chutney dip
Toasted sourdough with avocado, radish and watercress.

Starters
Roasted squash risotto, served with goats cheese, crumbled amaretti and crispy sage
Crab and pea salad with scallop ceviche and pea jus
Spanish onion, thyme and mascarpone soup with crispy white onion shavings
Venison carpaccio with horseradish and a truffle oil
G&T cured salmon with a lemon gel
Scallops with cucumber and lime.
Parsley panecotta with baby veg salad and a crispbread
Spiced tomato consommé with confit heritage tomatoes and barbequed fetta
Baked macaroni and shaved gruyere with crispy onion and parsley pure.

Main Course
Wasabi crusted rack of lamb with grilled pepper medallions and olive tapenade
Duck breast glazed in soy with date purée, pickled shiitake, fried walnut and pumpkin seeds
Pan fried hake with a white bean puree, Parisian fondant potatoes, samphire and clam sauce
Courgette, spelt and cumin fritters, served with a courgette, parsley and cashew salad
Slow cooked pressed pork belly with wholegrain mustard and potato puree, caramelised parsnips and a cider glaze
Smoked ‘Big Green Egg’ Chicken, with squash and a chicken leg croquette
Venison haunch with dauphinoise potato’s, blackberry jus and sugar snaps
Herb-ash beef fillet with parsley pure, wild mushrooms, bubble & squeak

Desserts
Raspberry and chocolate torte with a red current sorbet and mixed berry coulis
Chocolate fondant with salted caramel and praline ice cream
Sweet & sour lemon tart, raspberry Mascarpone and a honey twirl
Dark chocolate and orange ganache, orange parfait and cocoa nib tuile

Children’s Dinner Examples

Kaluma understand that for families, the happiness of children makes or breaks a holiday. Therefore we are prepared to pull out all of the stops to ensure that little ones are well catered for. Chef’s will discuss dietary requirements and children’s menu plans to create a menu suitable for all. Whatever the request, we understand whats important to kids!!
- Homemade chicken schnitzel served with homemade chips and a selection of vegetables.
- Spaghetti Bolognese served with homemade garlic bread.
- Salmon and sweet potato fish cakes, served with homemade chips and a side salad.
- ‘Pizza party’. Allow the children to choose their toppings and cook together
- Cheesy ham and broccoli pasta bake.
- ‘Build your own burger’. Homemade burgers served with a choice of trimmings.
